Is the Torrey pines/go pro set up the best if you want to use your scope normally or is there a better/cheaper system. I want to take pics and video through the scope but I want to use the scope as intended, not with a phone screen on the end of it.

I think at the current time the Torrey Pines setup is the best system out there. I could be wrong, but I haven't seen anything else other than that phone clip-on crap.

Yeah , I have no doubt that Torrey is the best, but that $1200 for an adapter is pretty pricey. By not getting any responses of better products, looks like Torrey is it.
