3-2-1’s, prime ribeye, and spatchcock chicken for the wife.
Had to look up “spatchcock” and I thought I was pretty well versed in the way of prepping meals. For those like me that didn’t know:
To spatchcock a chicken, or butterfly it, is to remove the backbone, thus allowing it to be completely opened out and flattened. Doing this reduces the cooking time significantly and allows the whole bird to be cooked in different, speedier ways, such as grilling or pan frying.

Well, we own a grocery store and sell BBQ, brisket, whole smoked chickens and other meals. I did 56 last 4th of July. That's the max the smoker will hold at one time

That was my next guess... You’re selling to the masses. Sweet gig.

That's what's on my Traeger now ... to bag and bring on a camping trip this weekend.

Looks awesome! Good guess, mine are back ribs from Sam’s using my own dry rub. Funny how close yours look like mine.
 
Grilled Brown or Brook Trout, depending on what I catch this weekend. These were from last summer. Hopefully this post does not jinx me.

Smoke something like this for you? I recommend onions and peppers topped with spicy mustard on a potato bun. Side of German potato salad.

Oysters on the half shell, corn on the cob, might pull some bone marrow out to do also with roasted garlic and crusty bread. 😛

Brisket. Wife went to the butcher and picked it up today. We will also have hamburgers and sweet Italian Sausage on the grill. Mac and Cheese, potato salad and cucumber salad will round off the planned menu for the day.
I’ll take mine to go 👍

I have a buddy coming from the coast that caught a ton of redfish. Gonna be a good weekend
 
Made 31 pork butts to sale, and threw on a couple brisket for the family tonight. Put the brisket on at 9:00pm last night and just now put them in the cooler to rest at 2:00pm. Having brisket tacos tonight.

Right now, I've got 2 racks of spare ribs, 12 lbs. of pork shoulder, and a little brisket point on the smoker. I'm using wild American Black Cherry I cut down for smoke, which I have to say is my favorite smoke wood by a country mile. Anybody else tried Black Cherry?

Update on my ribs... before and halfway photos were taken... Got drunk and forgot to take a photo of the final results.
