Sous vide steak is for people who suck cock. Change my mind.
Pretty sure most restaurants sous vide as it ensures a perfectly cooked steak and allows them to manage serving times a lot better.....so how did that cockmeat sandwich taste?

I have to say that one of the best steaks I ever had was at the big Texan steak ranch. I totally expected garbage tourist steaks. And I didn’t order the 72 Oz “free if you can eat it “ monstrosity. Instead I got a cowboy ribeye that has to be one of the best tasting and best cooked steaks I ever had.

I was absolutely shocked at how amazing the steak was in what I figured would be a tourist dive.

Agree. Been there many times and they do a great job.

Some of the other I been to were only very good, but not great.
 
i am more fond of having a good butcher that will sell me borderline prime for choice prices, but admittedly i have not tried online.

Ate there 20 years or so ago. Don't remember it being anything special. Maybe different now but drove past a few months ago and looked like same hole-in-the-wall place it always was. Hard to believe there's not better steaks in GA but maybe worth another visit. What's the 10% for the big guy thing?
 
I've never (will qualify and say last 20 years since I really learned what cuts and what to do) had a better steak than I can make at home. And yes, I've been at the best of the them all over the US.

As such, I will never get a steak out and will always choose something else I typically don't make at home.
I used to have the knack, just by beginner's luck, of being able to take a mediocre cut like sirloin and turn them into streaks friends talked about and wanted to know the secret. Back in the 80's when we were all broke, Chip McCormick and his g/f would meet at my place on Friday, bring the Corona and we'd grill steaks and watch Miami Vice.

The only secret I had was I'd season the steaks with Lawry's seasoning salt and course black pepper and leave them out before they got there to get to room temp. I'd save the blood that the seasoning salt drew out and when the steaks were getting seared over Kingsford charcoal I'd pour the blood and juices back over them. It formed a Teriyaki type glaze.

I can't seem to capture that flavor anymore or maybe we were just hungrier then.

If I want a great steak, I never go out for one. Only if I want a good steak and I'm on the road.
 
Had A5 in Japan a couple of years ago. Definitely better then what is served here. Been to my fair share of fancy steak houses in the US and it's just not even the same league. For the most part, I just stick with cooking a picanha at home reverse sear in either the smoker or air fryer. You can get a perfect edge to edge doneness like sous vide.

Peter Lugers was one of the best steak experiences of my life... I say "experience" because it was everything it supposedly was... The steak, well, ive had better.

St. Elmo's... if thats the "best" steakhouse in Indiana they need to bring some people in and show them how its done... The shrimp in the "signature" shrimp cocktail were over cooked. I mean, thats one thing you are known for and it was sub-par. The cocktail sauce was pretty fucking good, but I like horseradish. The steak... not even in my top 10...


And the "best" steakhouse in Texas is in Houston... there aint even any cattle down there.

Bones near Buckhead was great in the 90’s but also, I didn’t really have a lot to compare it too back then. I found an old receipt and my filet was around $28 🤣

I’m in the Rolla area regularly. So I’ll have to try Matt’s. To date the best steakhouse I’ve encountered is the “Twisted Tree” in the St. Louis area. However, I don’t go out for steak, or anything else, very often.
 
Waygu was the worst waste of money on a steak I have ever made.

Thank God Kroger doesn't have it in the sale bin.

Most "wagyu" in the USA is garbage...

Only one side of the parents have to be Wagyu and it can be sold as such... but that doesnt make it good. I wont buy Wagyu. Would rather buy prime grade at half the price. Most prime grade meat looks better than wagyu anyway. Most Wagyu you will see in a grocery store in the USA is not sub-graded like regular beef is. So you could be getting a piece of meat that would be graded select if it were not for the wagyu bloodline.

Japanese A5, thin sliced, and seared for about 2 seconds on smoking hot cast iron is fantastic.
