I am going to polish my Weatherby Mark V's Raceway because it is a bit gritty. What grit of paper should I start out with and work my way up to? I see a couple of spurs in the raceway too that's why I want to do it.

I did this on some mausers when I was learning to work on bolt actions.
I used 320 grit lapping compound on the actual bolt.
There are also raceway tools that will take sandpaper and slide it down the raceway for you.
I would use 240 to 320 and see what you get.

Make sure to remove ALL the grit when you are done, including inside the nooks and crannies of the bolt.
A full detail stripping is the way to go here.
