I have a remington 700P in 300winmag that Im thinking about dropping into an AI AX stock. But when looking at the AI website, it doesnt show a 300winmag option for the AX chassis. Will it fit? How easy is it to do? And will I need to buy bottom metal to use the AICS mags with it? Ive never used an AI chassis before.

You need the long action chassis with a 300wm mag, Eurooptic looks to have them, AI's cataloging is not the best.

What about bottom metal? Do I need to add anything to the stock in order to feed the Rem700 action with an AICS mag?

Take the old bottom metal and stock off, pull the chassis out of the box, drop the action on and torque it down. No need to buy anything else, everything is integrated into the chassis.
