I found this on one of the universities websites. Gives a general idea of what to expect, of coarse it varies with animal size. Fyi, make sure if you are buying a “cow” to make sure you understand if it is a steer, heifer, or a cow. A cow will be the least tender and should be substantially...- Beefmanne
