You are correct, sir. Depending on the size of the brisket. the 10 pounds and under can smoke in about 5 hours and left sitting in a cold oven overnight to finish cooking itself.

These days, I have been smoking in the evening up to midnight before a holiday. Such as Thursday July 3rd. I thaw out to brisket in the fridge, 5 hours per pound and want it thawed the evening before I smoke. So, I had it thawed by Wednesday 2nd. At that time, I trim off some of the fat but not all. You need some fat for flavor. Beef and pork fat have a sweet taste. I put on the rub. I could probably make one but I get good results with the Spice Hunter no salt Cowboy BBQ rub with chile.

That sits in the fridge for 24 hours.

Thursday 3rd, I get home around 7 pm and start the fire with coals. Once those are going, which doesn't take long, I put them in the side firebox and put on some chunks of mesquite wood. Not pellets, no slivers, quartered limbs and trunks of mesquite.

8 - 10 lbs, I take it off the fire around 11:30 maybe midnight. Set it in the 13"x9" roasting pan and set it in the cold oven. The meat will finish cooking itself without being overdone.

The next day, I can slice it up and put in zip lock storage bags. For sides, I often cheat and this time, I got packaged cole slaw and ranch dressing and also store-bought potato salad.

And I had leftovers for a week, which was fine with me. I do not get worn out on my brisket.

Essentially, Texas brisket is smoked dry, though I put an aluminum pan in the main chamber with some water.

As I have often bragged, my smoked brisket can tempt the faith of a vegan.

Oh man that hit home. We just got a laugh out of that.
My wife's nephew is here for some ranch rehab and about 8 or so years ago converted him and his brother back into meat eaters with my smoked prime rib. Just did another 1 this weekend and it was already laughed about.

I retired from CNC grinding, we made linear motion guides, I ground bearing blocks. The bearings we used were in 1 micron increments from -.010 to +.010 that is how they maintain the tolerance from the rail to the block. It is a pretty amazing system. One of our sister companies made the bearings we used.
