So I ordered some 150 grain Hornady eld-m and some 168 grain eld-m heads. The Box clearly states that 1 in 12 twist should be used with these heads. Can someone with knowledge about these bullets explain why they need a 1 in 12 instead of 1 in 10 twist? And has anybody use them out to distance with a 1 in 10 and had success?

You will be absolutely fine with 1-10. Those are minimum twist rates, not required or necessary or max. You could probably shoot them out of a 7 twist and still be fine.
But a 10 twist is a gold standard for a reason. It does it all.
