I have a Winchester long action with a claw extractor in a standard magnum bolt face. Will this action accommodate the 338 or 300 NORMA magnums? If not what fast 300 or 338 caliber can I use this action for. It will be used for hunting only!

You could run the remington ultra mag (RUM) family on that bolt face.

The 300 RUM or have it opened up to 338 (338 Edge)will get you the same speeds as a 338 Lapua Improved with way cheaper brass and no need for fire forming
I run a 180gr Nosler Accubond out of a 28" 1-12 twist Kreiger at just over 3400 fps shooting over 90g of R-22.
Its a long range hammer that kills like lightening

to answer the question directly. No you can't run either the 300 or 338 Norma from your rifle without opening up the bolt face.
Agreed you can run a 300 RUM or a 338 Edge. If I didn't hve a 338 action, I would be building the 338 Edge for long range work.

I would recommend against the UM series. The reason is the Winchester has 1" diameter barrel tenon and you will have extraction issues as well as dealing with a less than desirable short magazine.

Not sure if your stuck on the 30 cal but i had a buddy shooting a 300 win mag that was necked down to 7mm and Ackly improved , he wanted that so he would shoot with a 7mm STW speed wise bug have a shorter OAL or so he could seat VLD bullet out farther or somthing.
Anyway , i saw him shoot 2 deer at over 600yds with a 162 A-max launched at around 3100fps and the results were impressive.
I think you could probably get a regualr 7 mag close to that with alot less fuss , in any case the heavier high BC bullet in 7mm sure work well at longer ranges
