Do I need a 1 piece 20 moa mount or could I use high scope rings on a 6.5 Grendel for shooting out to 800-1000 yards. What do you recomend?

High scope rings are not going to do anything meaningfull for you.
The question of the 20MOA depends first on if your scope runs out of adjustment before you get to your maximum distance you are shooting to. If it runs out you can: 1) Get a 20MOA mount or 2) Get a scope with more adjustment.

Ballistic Coefficient: 0.263 G7 (ICAO)
Muzzle Velocity: 2400.0 ft/s
Sight Height: 1.50
Sight in @ 100yds

100 -0.0 -0.0
200 -5.5 -2.6
300 -18.9 -6.0

So from the above if your sighted for 100 yards and you can still dial 47 more MOA, you don't "need" a 20MOA mount. You may still consider one if your at the end of the scopes adjustment range.

Aadland 20moa mount/rings. Bullet proof on my 24" Satern Grendel with either 4-16x50 PST or 6-24x50 PST. Hadn't gone that distance yet, but feel completely comfortable of the gear handling it.

I went ahead and ordered an american defense 20 moa mount. I'm gonna be using a 10x super sniper mil/mil.

Yes, the Grendel has a very rainbow-esque trajectory. A 20 MOA mount is a no-brainer for long range use. It'll be needed for many scopes just to get that far. And for scopes that do have enough adjustment to barely make it, it’ll keep you farther from maxing them out which is generally a good idea.
