Why don't you see people shooting 7-08 with high BC bullets? Is it a problem to load them or a problem with OAL because of the long bullets? Lack of factory, match ammo? Seems like you would get a better trajectory with equal recoil as a 308, but I never hear about anyone shooting a 7-08 with a "heavy" bullet. What gives?

It has been discussed here. I have a 7MM08 but, as fate has it, have not ben able to wring it out.
The loads I got with it are 168 Berger VLD (longer than AICS mag length). I am going to try 168 SMK, 162 Amax and 175 from Sierra & Berger @ mag length to see what happens. Hopefully it will not rain til after I get finished at the range.

If you go with the Savage/Stevens centerfeed models you can load out to 3" and still be in the magazine!! I am loving my .308 build rifle because of this very thing. I have not encountered a bullet yet that I cannot get into the lands and still have room left in the mag. If you have the barrel custom chambered you can tailor it to fit whatever bullet you chose, at the COAL you choose up to 3"!!!
