I'm thinking about getting either a 260 Rem or 7mm-08 Rem AR-10. I was looking at the 162 gr AMAX, and the recommended OAL on Hogdgons site is 2.875", which is just a tad over the max OAL for the 308 Pmags (I've read the max OAL that fits is 2.820" but this will be my first AR-10 so I'm not 100%).

So my question is: Is it foolish to try and load such a long/heavy bullet to mag length, and if so, what bullet would you recommend in a 7mm-08 AR-10?

I know its possible to top load an AR-10, but then I'd just go the bolt action route. Thanks for your input!

You might want to look harder at the 162amax option, because unless you have a stash of your own it's not an option. Their production has been suspended by hornady indefinitely.
2.82 is even a little short for the 260 if you're thinking 140 amax. It'll work, but they tend to like to be loaded long in the 260, like 2.9-2.95.

Yeah... it doesn't look like 7mm-08 is particularly popular in the AR-10 platform, seems a lot of people favor 6.5 Creedmore due to the shorter OAL. Plus there is almost no barrels for 7mm-08. I'll have to look into the OAL of the 6.5 Creedmore at mag length.
