Looking for some input on which would be a better option for producing 7WSM from Nosler brass.

Either .270 or 300 WSM is going to be my starting point, but I'm concerned that the cheeper .270 may be the lesser of the two.

I plan on running a tight neck 7WSM (.312 nk)

Normally Id just anneal, expand the neck, turn and fire form by jamming in the lands if necking UP.

Im concerned with using .270 to do this because 1.) After expanding, the risk of there not being enough brass in the neck to get a full clean up cut with the neck turner. 2.) Turning too far down the 270 neck, leaving the 7WSM Neck-shoulder junction thin after fire forming.

I could just neck up to 30 cal then back down to 7mm to produce a false shoulder, but I feel I may be splitting necks bigtime...

300WSM brass is a bit more expensive, but I'm thinking may be less ass-pain.
Just anneal & neck down to achieve proper headspace, turn the necks for proper clearance (will be PLENTY of meat left in the necks) and easily just be able to kiss the false shoulder with the neck turner.

Any ideas?

I'd go 300 and just false shoulder it. Nosler brass tends to be fairly thin and I'd say your suspicions on the 270 flavor will prove to be true.

I was looking at this same thing recently and ended up going to 7/300WSM and using 270WSM Norma brass and just necking up.
