Out of curiosity, are you having some problems with the stock pack now that it doesn't meet your needs for additional comb height? If all you need is more height from it and you don't want to have to go through the trouble/expense of permanently modifying your McM Varmint stock, then DFOOSKING's "padding under the stock pack" solution works very well. Cheap, effective, not permanent and easy enough to remove and return the stock to original.

If you WANT to go permanent, then McMillan sells their saddle cheek pieces for their stocks, but they are almost $120 IIRC which is, in my opinion, pretty stiff considering the price of the Karsten saddle cheek pieces that can be had for roughly half that or less. Like the Karsten, the McMillan requires you to drill 2 holes in your stock for the bolts to pass through to attach the cheek piece (a drill press is a REAL bonus here, but not absolutely necessary if you take your time and pay careful attention to what you are doing).

right now i have the stock pack with 1 mouse pad under it. the reason i want to change it is. the rifle is all white for hunting coyotes in the snow, and i cant buy a white pack. i would love to have a white eagle stock pack. so if i change it to a cheek piece i can paint it.

Ultimately, it might LOOK better with a nice kydex cheek piece painted white and installed, but if you want, McNett makes a "snow" pattern camo wrap that might work for you. I got some samples from them at SHOT a couple years back and while I didn't really have much use for it, I used it on a buddy's Remington 700 who wanted a "cheap and easy" camo job and it worked very well. It is self-adhesive, requires no permanent alteration of the rifle you put it on, and stays put once it is on, but yet can be removed with no big effort and without chemicals.

Here is one source for it retail, but I am sure you might be able to shop around and find a better deal or maybe even find it locally.

Vet wrap from Home of Economy, TSC, Fleet Farm, etc works just as well. It holds up OK, defenitely not reusable, but the cost is what, $1.50/roll. I use that camo form too. One thing I just learned this year is it's not really reusable either, after sitting for a year. Tried putting the stuff back on a rifle and it wouldn't stick to itself anymore.

You could try spraying the stock pack white. It won't look white white I'm sure, but good enough.
