I have a new defiance rifle, new brass, upon ejecting I have noticed a dent on the case mouth what causes this

Could be:

-impacting the front of the ejection port
-impacting the windage knob (usually leaves brass marks on the bottom of the knob)
-impacting behind the ejection port (sometimes leaves brass marks on the receiver bridge)

If the dents aren't too bad, they will iron out when you resize with no issues.
 
Heavy spring on a plunger ejector.
Also check and make sure they are not hitting the windage turret.

This is your problem- cut a few coils of at a time , test it , it’ll take a little fiddling, and then you will find the sweet spot

Get you a lee collet die and deprime with it before cleaning. It will straighten the necks out. This is especially needed when using a bushing die
