Can you guys help me out with the differences when loading a belted mag like 7mm rem mag vs non-belted cartridges? I'm have just had others tell me it's a hassle but not really elaborate.

Just load it. Not a hassle at all. The guys telling you it is are exaggerating.

it's really no different. If you can't size all the way (or very close) to the belt the cases get sticky or may not last quite as long. In my 300WMs the shoulders get blown forward like .018" from virgin so I set my die up to set .004" HS off the shoulder and had the die shaved so I can size to the belt but that's really not neccessary. That allows me to co-headspace and I get 7 firings on Winchester bulk brass before the brass starts to give up or get tight and that's shooting 230gr Berger OTMs.
