I’ve been offered a 700 SA Mcrees chassis in trade, are they any good? Its a roughly 400$ Value trade, I would rather have cash tbh but a 700 folder project would be cool too.

Are they good? Sure, if this was 2010. There's nothing inherently wrong with them, but they aren't even close to being in the list of chassis that I would consider for a project. They were pretty basic 10+ years ago and I don't think they've done much to improve, so you have a ton of better options out there. They also irked a lot of people with their lawsuit.
I’ve had a couple. They do the job but as stated very basic. At least the ones I had. Very few areas to install any rails on the forend. Had more of a skinny “block” design to it.
It’s a chassis but think of it as “gen 1” vs the newer stuff at say “gen 3”. For the right price it’s usable and I wanted to like mine but eventually upgraded to MDT
