I have no problem about responding with a polite 'Thank You".
I don't believe it makes a difference what reason prompts an individual to agree to putting their life on the line on behalf of their society and their fellow citizens, or whether or not they were ever called upon to actually do so. Insisting on distinctions brings up the whole "who's a <span style="font-style: italic">real</span> Veteran" issue, and that's a complete red herring.
The real issue is that our society is made up of people who invest themselves in different sets of values. Some make a commitment to contribute to society's good, some don't, and some prey upon society in the manner of jackals.
It is the first group we honor today, and they have a complete right to say 'you're welcome' in response when thanked for their commitment and any sacrifice they might have made as a part of their contribution to society.
It's not their reasons that count so much as their commitments that deserve the recognition. Refusal to acknowledege that is simply impolite and without reasonable basis. IMHO.
