I don't believe any school can make you a gunsmith. If you are young and mechanically inclined you would be better off taking welding and machining classes at a trade school near you. Then work 3-5 years in a job shop that repairs/builds/works on different things each day/week. Next take a big cut in pay and go to work as an apprentice in a real gun shop. Not one that only swaps parts. Maybe by the time you are 40 you can go out on your own. These schools wouldn't exist if it weren't for the government paying the tuition for all of the ex military guys attending them.
