Hunting & Fishing Pheasant Recipes??

Anybody got any pheasant recipes they want to share, either by PM or here?

I've tried grilling and frying it like chicken and if I can't find another way, well, I'm gonna give any I kill away.

You can bake em in your favorite flavor of shake-n-bake.

Or heres a couple of my favorites.Cut the breasts up into smaller pieces.Tenderize the hell out of em.Then take some club crackers or ritz crackers.Pound em to a pulp.Dunk the breast pieces in an egg wash then roll em in the crackers.And fry em up to golden brown.If you like em,then cut up some green chile's and put em in with the crackers.It gives a pleasant little kick.

Heres my favorite way to eat them though.

Again tenderize and cut up the breasts.Take jalapeno pepper and cut it in half length wise.GET ALL OF THE SEEDS OUT! Then take the pepper half an spread some cream cheese on it.Put the breast over the top of that.Then take a half slice of bacon and wrap it around the whole thing. Then put all of your poppers(it's what we call this dish) in a baking pan and then dump some crushed red pepper italian salad dressing over em.Use enough dressing to cover the poppers entirely.Then bake at 350 for about 45 minutes. This is also verry tasty with quail!

Great now i'm hungry!

I'll definitely be trying the second recipe. I guess I didn't tenderize it enough. You use a meat hammer or one of those spiked slap chop kinda things?

I cook pheasant like I was taught to cook duck by my (Czech) grandmother and mother. Roast it and serve it with red cabbage. This is a good roast bird recipe (it's based on a 3-5 lb bird, reduce as necessary for the size of the bird. It totally kicks ass if you serve it with red cabbage and potato dumplings.

1/2 teaspoon caraway seeds (a bit more if you like)
salt to taste
several sliced garlic cloves
2 cups water

Clean and wash bird. Sprinkle with salt and caraway seeds inside and out. Take the slices of garlic and slit the muscle under the skin and insert the garlic randomly. Pour 1 cup water into roasting pan, put in bird breast down, cover and roast in a 350 degree oven for 1-1/2 to 2 hours. Turn and roast, uncovered, for about another hour. During roasting, pierce skin several times, skim off excess fat, and add more water as needed.
