I dont eat that crap. I will eat liver mush on occasion...fried. I like souse, which is snouts, ears and feet. Some might call it pork jello. I prefer it cold pickled in eastern carolina barbeque sauce....some of you unclean, unwashed masses just call it vinegar, but that's cause you dont have the recipe.
