With the Remington 700- LS, is it possible to simply change out the bolt (bolt face) to shoot different cartridges? Is this a "plug and play" or is the services of a Smith required?

Changing the bolt is the simple part. Ensuring that the new barrel is headspaced properly is more complicated.
Bolts and the receivers have tolerances and they vary. It's worse with production rifles. Bolt might fit with proper clearance to the barrel...and it might not. Same goes with headspace as well.
That's why we don't offer prefit/drop in barrels for Remington and Winchesters etc....
Even with some of the higher end custom actions they can still vary.
