So I have a Remington 700 SPS Tactical with an EGW 20 MOA rail mounted on top. I've ordered a Nightforce 3.5-15x50 to top it off. Which Badger rings should I go with? The .885" (mediums) or the 1.00" (medium-high) ones? Thank you in advance for your help and expertise.

The mediums will work.I used the same set up with a badger base and standard height badgers.
