Guys,
I recently purchased:
Remington 700 PCR in 6.5 creedmoor (m-Lok)

Optics will be
Vortex Viper PST Gen II 5-25x50 EBR-7C MRAD FFP (30mm tube)

I am looking at Nightforce ultra light rings and Vortex precision match rings.
What height do you recommend and which brand? Other recommendations are welcomed.

Either brand is fine. For that set up I'd go with either NF A108's (1.265" high) or Vortex 30-126's (1.26" high) to clear that extended mounting rail and handguard.

The Vortex (or Seekins) 1.26” will give you just under 1/2” clearance.

Correct, Athlon Ares BTR 4.5-27. Good eye! I am not a Remington guy, but I really like the PCR. I replaced the craptastic trigger with a trigger tech but otherwise it is GTG.

I got Vortex 1.26 rings for the same scope on a Lone Peak Fuzion and M24 barrel, as per Vortex CS recommendation. It appears to be OK
