No, don't regrind the hooks. The safety will no longer fit properly, even if the sear does.
Is this the GI model with the spur hammer, or does it have a ring/oval hammer with a beavertail safety? This will tell us better what you can fit easily, not knowing your level of experience, of course.
I build my own 1911 pistols and use Berryhill ring hammers (just because I like the look - Brown is just as serviceable) and Brown grip safeties. For the thumb safety, this particular Caspian

I like to start out with RIA pistols, but will be going over to Springfield for the next build. Just a bit better quality frame, IMO, even if it <span style="font-style: italic">is</span> made in South America.
