I have noticed while researching on how to bed a stock that some of you experienced a smoother action afterwards. I am too experiencing this (which is frickin awesome). My 700 is a hell of a lot smoother now. What causes this to happen? Less stress in places maybe? Any input will be greatly appreciated!

It does reduce action stress and truth is most people over tighten their actions causing a slight bend which causes friction.

That would be my guess. If you torque down your screws and it twists your action that would cause your bolt to bind in the action. Bedding (properly anyway) would alleviate this.
