So with the insanely high prices of stocks and chassis systems these days, and the relatively inexpensive barreled actions that shoot pretty well out of the box with hand loads, has anybody tried swapping multiple actions (of the same brand/dimensions of course) in one chassis or stock and of so, did you have any problems?

If you're willing to check your zero, you should have no problems. A click or two is all it will likely move if carefully installed and torqued. It may not move at all, but I wouldn't stake an important shot on that assumption.

I would think yes to chassis and stocks that have mini-chassis or similar installed.
No to stocks that are bedded or stocks with aluminum backbones that are not precision machined (since they will need to be bedded anyway).
