do not see anything wrong with an pit in ground bbq if a rose by any other name is still a rose then bbq is still dam good . watched a Hawaiian in ground pit bbq wrapped in banana leaves with the vegies and pig all in the pit for two days it looked amazing when they uncovered it .

Anyways, this thread has got my appetite set up for sure. Going later to our local 100% authentic Sicilian joint. Original owners came here and set up shop in the 1900's. Like all older Italian establishments and associations with the Mafia, this place has it's share of the stories when the bosses of one of the Five Families of New York would come in and have banquets or social events. Adds to the old school and quite hardcore New York atmosphere. The beef meatballs that they make... Awesome is an understatement.

A small pig that is covered up and slow roasted in a pit sure is fine eating.
