Outside of overpressure signs ranging from primer signals to hard bolt lift the ONLY relative measure of pressure is velocity. But it is not a "perfect" correlation to pressure. Some barrels are faster than test and some are slower. Also you may not be at maximum pressure at a loading manuals...
Assuming the barrel is free floated in the old and the new the load shouldn't move much. If the stock isn't free floated now and will be free floated in the new mounting then the charge could change, maybe a little or a lot.

Since it's primed I would load and shoot. Don't worry about the Headspace on the first firing. If the necks are mangled you have to decide whether or not to try and carefully resize the neck, without a recapping pin. Or here is a thought, get a good case gauge.

Stability is a function of gyroscopic stability just like a top. It's all about spin (RPM) which is determined by twist and velocity. RPM=V*720/T, V=velocity(fps); T=twist (in/rev). The stability calculators do this for you. You simply enter twist and velocity.
I'm no Dasher expert but based on some info from some "experts" that freebore works well with bullets of 105 gr and higher. It's a little long for lighter bullets.
