I’m not LE but the statistics I have seen would make me VERY concerned about being attacked with a knife. Damn sure not “unarmed.”

From what I've seen of NYPD shooting at things, you're legs have the same amount of probability of getting hit that the guy next to you, the car 50 yards to the side of you and the building way off to the left have of being hit.

So technically, they COULD shoot you in the leg.
