That discussion is like boiling the ocean.... depends on the task at hand.

For example, many other materials have been used for cartridge cases from case-less, to paper, to textiles, to polymers, to metals, etc.

When it comes to projectiles, it gets a little more difficult but even then there have been alternates of all sorts of complex approaches to over coating lead with polymers and epoxy, dense metal covered with polymers, etc.
