I would imagine it would taste similar to otter as they both eat mainly fish, but otter is extremely lean. Penguins need alot of fat for arctic warmth, so I'd bet it's got some fantastic marbling..... count me in!

But they can be pretty active(swimming) a lot of inter-muscular fat doesn’t usually go along with an active animal. It also wouldn’t insulate very well scattered about, a thick outer layer on the other hand.
