I do miss living in NJ for car shopping where at least you could look and drive these at the dealers and make deals .......different world in the panhandle
30 years of racing corvettes i went with porsche to slow down i miss the torque , so maybe one last hurrah

My hammering it. I would power brake and burn the tires off, I jumped it (more than once) I took it mudding all the time. I even threw it in reverse and floored it. Went 45 in reverse and blew reverse out of the tranny. It was a fun truck

A friend had a tuned CTS-V. That was probably one of the fastest street cars I've ever driven. Was putting down 636hp to the wheels. The Blackwing would be my choice. Owned/Driven some fast cars and bikes, they all sucked to DD, the Cadillac didn't.
The Viper was the worse to drive around town. The heat off the exhaust made it unbearable. Was a late 2000's model though.

One of my best friends had a CTS-V2 stock blower, stock heads, and bottom end that wen't well into the 10s and could be daily driven in luxery. Awesome cars.

The cars you're talking about it's normal for the dealers to send a truck and trailer for the car to do service work. They pick it up and drop it off for a minimal fee.
You're talking about a $175k car, but won't spring for $500-1000 on getting it serviced so that it doesn't inconvenience you?
Clients house I just finished, they're showing up next week. Last week they had the local Mercedes dealer deliver their car to their garage so it's ready and waiting. The dealer will pick it up, service it, and drop it back off anytime it needs it. So whenever they visit their vacation home, their vacation car is good to go.
You can't tell me that if they can do that in Montana, you can't find a reasonable dealership in Florida.
Their weak link is the rear axles. Trying to launch a car that heavy tends to grenade parts if it hooks.
How close does a dealership need to be for a vehicle to be a viable option? If you are in Panama City Beach, FL for example the M-B dealer at Ft. Walton is like 60-65 miles away. In my area (Black Hills) that would be considered pretty damn close.
I don't have much helpful to add here in your quest. I used to be a vey enthusiastic car guy but that time seems to have mostly passed. The current state of the automotive market has made it tough for me to find anything that is all that compelling that I can reasonably afford or justify, at least where performance enthusiast cars are concerned.
A few of the issues as I see it:
1.) Modern high end sports cars are so fucking fast and so ridiculously capable of cornering, changing directions, accelerating, and stopping that they are basically pointless on public roads. You can't exercise them properly outside of a race track or drag strip because by the top of 3rd gear you are felony speeding in many states. Sadly I don't live near a race track, or a drag strip. Maybe you do.
2.) Law enforcement attitudes towards spirited driving seem to be a lot more strict than say 20-30 years ago, so the chances of picking up more serious charges when you do partake in a nice session of letting the beast eat and get caught.
3.) All of the vehicles are massively over complicated, and it is questionable how suitable any of them are for long term ownership. Between parts availability and the fact that many dealer techs can't or won't work on the low volume high performance vehicles can make service and warranty support tough in many parts of the country.
Not that this will help but if my goal was something with 2 doors, automatic trans, daily drivable, and capable of winning most stoplight acceleration contests I would take a hard look at what the most commonly encountered contestants you see will be driving. You mention it's all pickup trucks, and probably a lot of SUV's. Outside of the odd Ram TRX, or Ford F150 Raptor-R most trucks are laughably slow compared to even midrange priced sports cars and luxury cars. Pretty much anything you choose in the $70K on up range (and even quite a few in the $45-$50K price range) will handily mop the floor with 90-95% of the vehicles you probably see on any given day being driven around in your AO. With that in mind something with over 500hp that is under or around 4500lbs with adequate traction will most likely stomp all over the local hillbillies in their pick up trucks.
Not that I am advocating for a specific vehicle but just over your budget (if you can limit options a bit and you don't mind driving 60-65 miles for service) but new M-B S63 E AMG is not only absurdly quick, but if you stick with 20" wheels probably quite comfortable, and being a 4 door with a trunk also practical. A big luxury sedan with 791HP and 1055ft-lbs of torque is bound to be entertaining, most of your fellow road goers will have no idea what they are looking at. You can scare the shit out of yourself, 3 friends, and the dumbass kid trying to run around you in the outside lane of a two lane freeway on ramp in his fart can equipped Honda Civic.
I met with some Porsche engineers who said that they test a car by throwing a cat inside. The next day they check, and if the cat is dead, they know the car is airtight and passes spec. The Jag engineers said they have a similar test. They throw a cat inside, and the next day if the cat didn't escape, they know the car is to spec.
Two dudes from Switzerland…brothers I think…were picking up their matching GT3 RS 4.0s (sequential serial numbers) when I picked up my Cayman R in Stuttgart back in late 2011. You can see one of ‘em here in this pic:

interesting options from manufactures .......mustang offers a LA hoodrat car jacker dream come true a drift brake perfect for street take overs while corvette has a track package for the z ....cup tires the ones that can be a challenge in rain or cold weather and depending on your track driving corded in a weekend at least my 07 z got 17 k out of rubber and my porsche gets almost 25k out of rears maybe
