You can send your NON-Brown 1911 to Ed Brown. They will install any Brown part on a 1911 for you.

Re: Bobtail conversion..any suggestions on who to use?
ed will send you a copy, but its pretty simply. you need a drill press, a vise on that press and a #2 drill center to start the hole. clamp the jig in vise and center the first hole of the jig. then slide the pistol up futrher on the jig to the second hole and put in a pin and drill the frame where the bit is centered. you will have moved it up the exact distance after centering and then moving the frame further onto the jig.
Re: Bobtail conversion..any suggestions on who to use?
ed brown is what I've always used. You'll cut away a lot of material on the ears and grip safety web area but you'll get a higher grip in the process.
If you go with ED Brown, you'll want to consider undercutting the trigger guard...the higher grip at the rear will jamb your fingers up into the trigger guard on some frames making the grip feel a little awkward. You may not notice it but if you do under cut...you'll never want a standard front strap/trigger guard again.
