I live and hunt/shoot in Eastern NC at 150'-200' above sea-level. This November, I am going on my first trip to Alberta Canada to hunt whitetails. Elevation will be somewhere around 1900' above sea-level and temperatures could be from -20* to 20* (Hopefully). How will this affect the way my rifle shoots? Faster or slower? Point of aim to point of impact? I will be taking my 300 win mag and shooting 180 grain Nosler Accubonds.

300 win mag for whitetail? I hope there some meat left. How far do you plan on shooting? Anything inside 500 yards I wouldn't really worry about it....

It's .30, same as a .308 or 30-06. It's just flatter and faster eh.
And that is the reason jugi16 deemed it "overkill".
Higher elevation (in general) makes for thinner air and less drag on a bullet. However, colder air makes for thicker air and slows a bullet. Extreme swings is where a guy sees drastic changes in poi.. in all reality, 200 yard zero will not change regardless where or what you shoot. As mentioned by another, the longer the ranges you are shooting in those swings of temp/altitude, the more drastic poi and "dope" variation you will see.
