Vacation spots in December?

Hey, his only stipulation was no beach....I operated within those boundaries :)

While at KASOTC he can take her on a horse ride to Petra.
While at RSU he can take her to bath house where they whip you with some kind of dumbass bush branch to open your pores (Women love clean pores).

Great option there, as is Asheville with the Biltmore. I took my wife there a few years back for her December birthday, nice romantic location for a honeymoon, definitely stay on property and take in the five star service and incredible dining. Both the Biltmore and Dollywood/Gatlinburg go crazy with the Christmas decorations and events, and are close enough to each other to do both in a single trip.

Deadwood is low season and a good bargain in December, but snowmobile level snow usually doesn't show up until Jan/Feb. We're just too dry in early winter around here. Jackson/Yellowstone is another story though, if the park is your interest then it is mostly closed up and snowed in that time of year.

I'll add southern Utah parks, Zion is quiet that time of year yet still 100% open unlike Bryce (3k ft vs 8k at Bryce), and that's also a great time to have a quiet visit to the Grand Canyon. Moab is quiet then too with all the parks open and mostly accessible (you'll still want AWD/4WD), you just won't be doing any river trips. If that's your interest, Sorrel River Ranch on the Colorado is the best romantic option.

North Rim will probably be closed by then, shuts down sometime in Dec IIRC, but south rim is where the good stuff is at anyhow. Nice little train ride between there and Williams too, good for something to do aside from the canyon itself. Pack for cold, that’s high altitude there but crowds will be low and they let you drive the rim road that usually is bus tour only during the season.

I went to Rock Creek last November. Very high end accommodation, food and service. It was amazing! They even set up a long range course for us. Shots out to a mile.
 
Ask Barney about the recent changes. Pretty sure they have their own Dearborn down there.

I hear ya though. Dont write off Poland. Great food, drink, and people. And they have not been conquered like the other parts of Europe. And the exchange rate is pretty good. Prices like here, but exchange is 3/1 last 2 times I went.
Did I mention good food and drink?

And for single guys, lots of attractive ladies who like to practice their English speaking skills.....

Haha, I got stuck in the Gillette airport parking lot at 4am on New Years Eve, in four high and chained up. Buried to the frame in a drift I didn’t realize was as tall as it was until I was fully committed, had to dig myself out and back out of it.

Yeah, feel free to visit Wyoming in the winter, it’s “fun”. Just bring something on 35”s or higher, lockers help too.
 
As @Redmanss stated, the Sorel River Ranch outside of Moab, UT is really nice. Plenty of Nat Parks nearby too. The wife and I stayed there years ago and enjoyed the place, the scenery and the food & spa.
It's a real neat place in the winter, of course I'm a bit biased being as my dad works there and runs the fields on the ranch. Here's some December pics from way back, all taken from on the ranch itself. That's the Colorado River that the ranch sits alongside.

And then there's Dead Horse Point in the snow, cut by the Green River. Such a common type place there, it's "just" a state park.

This is Beautiful but not ROMANTIC that i'd want to visit with my wife. Nah.
The rest of the resort is the romance side, although everyone (especially women) have different ideals of what is or isn't "romantic", basically it's romance for those who don't like the city. Full service spa, five star dining, posh private cabins, away from the crowds even at high season, ass kissing service, it definitely is NOT a dude ranch.

I've taken my wife to Paris, Milan, Rome, Venice, Munich, Frankfurt, and many other cities as we both love old world stuff, but for us no city can match the romance of being alone with nature.
