I am looking for a Remington 700 stock for a match gun I am building and was wondering what people would recommend for a $450 to $600 budget that’s short person friendly

I've had good success with the Manners T-2A for competition. Mcmillan offers a solid platform and I've seen them on the forum for the price you indicated, Granted both of these stocks will be at the top end or slightly more.

KRG bravo. Same ergonomics and featuers of a mcmillan/manners but you dont have to buy a bottom metal like any of the other choices. Has adjustable mag well, adjustable comb and adjustable LOP, not to mention all the other accessories like arca plates, spigots, etc. they offer.

The only problem with that is that I am left handed shooting a right handed gun and the cheek riser knob is uncomfortable for me

Could get a replacement screw knob. Figure out the threads and go to McMaster and find one that'll be more comfortable. You could even use a flat head or something if needed.
