@hangunr I have the top knife on my Hobart. They are very easy to sharpen. Piece of glass as the flat surface and wet sandpaper, just rub in a circular motion. Cant remember the grit but it seems to be in the 1500 - 3000 range. Actually sharper than they came from Hobart.
I have done my own sausage for over 50 years, it's not only entertaining but when I take it to the locker to be smoked I know I'm getting my deer back. I have 2 grinders a 1 1/2hp Hobart and a Lem 1/2 hp #8 big bite. I don't use the Hobart much anymore unless a group gets together and 3 or 4...
