Along with what Mike Casselton is suggesting, remove the firing pin assembly from the bolt body to see if that makes a difference. If the bolt body or lugs are dragging then it will still have the problem.
@20drone19 -- it depends what you what to do with those rifles. Unless you're wanting world class benchrest competition accuracy you'll be fine. Find another 'smith that will chamber what you want.
When I first started turning necks I used RCBS case lube. I would apply it with a q-tip type of cotton swab. At some point i got some of the PMA neck turning lube as part of a package i bought. I like how it works.

It sounds like you're too hard on yourself. If you ruin a piece of brass somehow just live and learn. As for the brass headspace variation try some things that are generally thought to help.
(try in this order)
1. Run the case into the resizing die and wait 10 seconds before removing.

You're asking a little different question. I would think you could cut off some of the ejector springs to reduce the force applied. You would want to take off a little at a time and try it out.
The 308 Win is known for being able to withstand thousands of shots. The 168 gr at 2700 fps is a good combo.
As was mentioned, the rate of fire, meaning how hot you get the barrel , has a big effect.
