If you're gonna repaint the stock, then I'd fill in the original bolt notch with firberglass resin with fiberglass cloth added to the resin. 24hrs to cure, sand it down smooth and recut the bolt notch to fit your new handle.
Here is something similar. I filled in the bolt notch on a LH HS...
If you have a drill press and a drill press vise, You can get it done with a forstner bit
If you plan on using a hand drill, I'd rather use a dremel tool.
Secure the pillars to the action, take your time, check fit often

Take it out for a test run.
If it shoots to your satisfaction, shoot it as is.
It can't hurt anything as long as you don't plan on returning the stock to the original barreled action it was bedded for.
