One thing for sure is you will want 1/8.5 or 1/8 twist, they will both work fine with the 140's and under. Contour is personal preference, go with the heaviest you can sand to hump around I like heavy barrels (MTU) but I also have a great appreciation for the meduim and heavy palma contours...
a small firing pin is an essential part to shooting a cartridge with a small primer. Most good gunsmiths will tell you that the firing pin hole will need to be bushed and a small firing pin installed. It's not that big of a deal to do it right.
If you are going to run a brake on your hunting rifle I suggest using some electronic ear pro (not a bad idea for a non braked rifle ether) all brakes send a pressure wave closer to the shooter so I don't think any of them are really a good option without protection.

I am running 42.8 H4350 with a velocity of 2830 fps and I don't have any pressure signs at all. I am on my 7th firing of a lot of 200 pieces of brass and I have only had to toss 4 pieces due to loose primer pockets. I'm pretty sure those were pieces that I used in load development and ran them...
The hybrids are awesome, it would not be hard to get them shooting in any reasonable chamber for any 6.5 that has the capability of pushing them 2650+

Yes, the profile of the Amax and hybrid are very different. I think the Amax is about .050" jammed into my lands with this chamber, like I said they still shoot great but the extra pressure from being jammed causes a drastic increase in felt recoil.

My rifle was chambered with the smith knowing that I was going to shoot 140 hybrids out of AICS mags so it has a shorter throat than most. This is great for shooting the 140 hybrids but if you want to shoot any factory hornady ammo with 140 amax's i would advise against it because it has them...

Just curious, what are you having built?
If it were me I would go with a 7 SAUM and shoot 180 hunting VLD's or hybrids close to 3000fps.
That being said i hunt hogs with my 223 AR and almost all of them drop where they stand with a 77grain smk right behind their ear
