    I didnt wrap at the stall. Just let it ride at about 225 till it hit 200 internal. Could have sped it up, but I had the night to myself, so I just sat with the dog and watched it work.

    9.25 lbs from my favorite butcher. 21 hours of smoke and 2.5 hours of rest in a cooler, wrapped in towels. I've experimented with many rubs and injections, but I'm completely sold on Meat Church, now. Not turning elsewhere any time soon...
