Unlike many members here, I cannot afford multiple optics, so I need to find a nice, multi-use scope. I'm set on a vortex Viper offering but I'm not sure if I should get the 2.5-10 or the 4-16.

It would be used on a semi auto 223 from ranges 100-300 yds (maybe closer) and also on a 308 bolt from 100-500. I don't forsee myself shooting much further. I don't expect to be able to shoot .25 MOA, but my equipment is surely capable of 1 MOA or better, and I'd like my scope to be in line with that as well.

    Any thoughts or advice?

Should be a good optic for what you're trying to accomplish. I would go with the higher power version since you plan to shoot to 500. You can always dial down! Would get a good QD mount, since you plan to switch it between rifles (LaRue Tactical or search for other good options). With bipod and rear bag or front and rear bag you should be able to achieve < 1 MOA with practice. Most rifles tend to shoot better than the shooters. Good luck.

I had the same CONOP for my gas 223 and a bolt 308. I went with a Viper PST 4-16x50 and a QD American Defense RECON mount. This is plenty of magnification for my shooting out to 400 yards. When switching between the two rifles, the QD mount resettles back (close) to zero after a few rounds. The difficulty I had was to get the right height as I switch between the rifles. I tried keeping the scope as low as possible on the bolt gun while high enough on the gas gun to clear the BUIS. This went on for a short while until I saved up for another scope. The CONOP works if you don't mind the minor inconveniences. Good luck.
