im new to butchering deer and was wondering how long to age the deer. also if you have any tips on skinning and quartering they would be really helpful

Gut it and hang it for about 10-14 days dont skin it until your ready to process the meat it will age much better that way be sure to keep it in constant frigid temperature

how big of a differance do you guys think the ageing makes. also it ll just be hanging in my garage so could i butcher it frozen or do i need to thaw it someway

I gut and skin and quarter in the field and bring them home on ice in a good cooler. I then let them "bleed out" in the cooler over about 5 days give or take a day. I drain the bloody water out at least every day and add fresh ice to the cooler everyday. I really think this helps but hell I'm no specialist but we eat a few deer a year here. Hope this helps.
