Years ago we had a cowboy from Australia that worked on our ranch for a while. He was a great man, hardworking, honest and an all around good hand, we kept him as long as he would stay and paid him well as he was worth it. He wanted to work on as many ranches as he could in the area so stayed only for a short time at each ranch then moved on to further his education. He was from the interior of Australia, not near the coast
He was at our place for Christmas in about 1977 and we made Angles on Horseback. Tomatoes were not in season here but were in Australia at that time of the year so we drove 90 miles to Denver to get good tomatoes, I remember that much, so tomatoes were a prime ingredient as well as onions but I don't remember what else we used other than they were really good.
We did them for several years but over the years they got lost for the more traditional "Christmas " foods here. I do remember broiling them in the oven but that is about all.
So---From our friends from Down Under, How do you make them? All info greatly appreciated. Keeping in mind that he was from the interior. Regards, FM

Mike, with that title and the lead in I ws expecting that he died and you were honoring him somehow.

I am honoring him. I want to make what he did like back in days gone past.
He taught me something great, I just can't remember all. So need a bit of help.

While those sound good and I am sure they are, here in Colorado and where he was from are all inland so I don't think any seafood was involved. I am not sure it wasn't though?
I remember the trip to Denver for good tomatoes and I am sure about onions and making them in the oven, that is about all I remember other than they were really good.
We had ordered in a couple of cases of Foster's for him for the holidays so that may have had something to do with it.

You sure you got the name right FM? That name generally refers to bacon wrapped oysters or scallops. I am not aware of any recipe for them that uses onions and tomatoes but I have made them and served up on toast spread with sauteed tomato onion and garlic.

I am going to root around in a couple of old cookbooks the Old Lady has and hope we wrote it down somewhere.

My older sister used to make what was called "Angels on Horseback" years ago (50's). Her version was basically a hot dog topped with onions and cheese and baked in the oven.
 
vwhugger, We are getting closer but I am sure it didn't use hotdogs. I would have remembered that and I think cheese was involved as well as onion and for damn sure a trip to Denver for good tomatoes. They were a prime ingredient, hence the 90 mile trip to Denver and back for good ones, fueled by Foster's.
It was special from Down Under for Christmas from the area he was from. He was from a ranch,"station" in the interior so don't think seafood was involved but I could be wrong.
I now have the old cookbooks that my Old Squaw, who was a young bride back then, out and am looking for "that" recipe. So far no luck but she does remember them too. I hope we wrote it down.
I stayed in contact with him for years but that has been lost as everyone moved around and a lot of years have passed.
At this point I am going to "wing" it and hope for the best but who knows, maybe someone from down there will know what I am talking about.

A lot of "Australians" are actually "imports" so it could have been a dish from his families homeland, Any idea when this happened? Fosters lost popularity here about 40 years ago and was actually sold off to overseas companies and is very hard to find here.
From Wiki: An odd case emerged in 2015 when a New York consumer of Foster's Lager sued the brewer after - he claimed - discovering it was not brewed in Australia.[SUP][20][/SUP] He proposed a class action on the grounds of deceptive marketing. The suit cited advertising slogans such as 'Foster's Australian for Beer' and 'How to Speak Australian' were intended to trick consumers into believing the beer is made in Australia - which in turn meant the beer could be sold at a higher, premium price.

A number of companies own marketing rights to Foster's including Heineken International in Europe and CIS, MillerCoors in the U.S., MolsonCoors in Canada and Brasil Kirin in Brazil.
 
It happened in 1978-9 and he was really glad to have Foster's. He was genuine Aus. his family lived in the Outback for generations and he was very happy to see it. He came from a "station" in the interior. Kind of like an exchange student.but not so much. The beer was good and we all wished it was more plentiful instead of "special order"
We went way out of our way to get it, ordering it months ahead so it would be on hand for him for Christmas. He was very happy and told us it was the "right stuff."and was very happy about it.

I understand that things are not as they used to be, it has been many/40+ years ago.and things change but we sure did have a good time and the Angels were a special treat to him and we really enjoyed them. He did all of the cooking hence, I don't remember much.
I think it was probably something that was near and dear to his heart and we got to enjoy them also.
If I knew how to get in touch with him I would, but that is long gone unfortunately. His name was Anthony and that is all I know. We called him Tony. and he made that years' Christmas special to us.

For what it's worth, we had an Australian family friend whilst living in the Lower Mainland of B.C., who's favorite beer at the time was Double Diamond. A long time ago, in a galaxy far, far away.....

This bit about the dish though, is interesting to say the least.
