I have a 3x3 piece of AR500 that I want to get some 1/2" mounting hole cut, anyone in the area have a waterjet that can cut 3 1/2" bolt holes for me?

Just grab an American chopper drillbit, AKA a stepdrill from Harbor Freight, they drill through diamond.

Take it to your local welding supply store, they will know who in your area has a water jet. They might even do it with a plasma cutter, if you offer them some coffee money.
