5/16 x 24 will cover most knobs but I did run into one recently that was threaded 5/16 x 18.

Still, I would stick to the standard 5/16 x 24.

Most are 5/16-24 Ive seen a few with extremely small threads though Like 10-32. If youre looking to get your bolt threaded,I would call the smith and ask what size he or she uses before buying a knob.
