I do it with the action setup in the spider that I normally use for cutting the tenon true again. All of it's done in the same setup without moving the setup even 1 time. This way everything is cut to as true as your lathe is.

ETA: My method may not be the preferred way by some of the other gents who do this for a living but so far it's yielded me some very fine shooting rifles that are more capable than I am.
