Wondering if a 1/11.25 or 1/11 rifling will stablize the 208-gr AMax? Or will I need a 1/10 barrel?

Only need 1:10 twist for the very heavy .308 bullets.
You should be fine, but there's that matter of bullet seating to magazine length and VLD bullets ogive position... Might find bullet jump is too much when loading to mag-length. Might also find that bullet protrudes too deeply into your case.
Berger 185s or Sierra 175s probably a better all-around solution for magazine length use, but have fun and let us know your results.

I have a 1-11.25 and it shoots the 208 and even 220s just fine.
