The eld-x is going to have better results, in gel, than the elf-m. Plain and simple. But shot placement is always more important. If you can deliver an elf-m exactly where it needs to go, you're going to have a DRT animal. People have been killing gave with match bullets for a very long time. The Berger VLD hunting bullet was originally their match bullet. It worked so well for hunting that it became their hunting bullet when they thickened the jacket to create the current VLD. The AMAX has been a popular hunting bullet for years despite being listed as a match bullet.
That said, personally, I have match loads and hunting loads and I use hunting bullets for hunting and match bullets for targets. Just cuz I probably CAN kill with a match bullet doesn't mean I should. If an animal takes a step before the bullet gets there, the better expansion of the hunting bullet may make recovery easier. At long range you're going to need to find a bullet that'll expand at low velocity. For a real long shot I wouldn't use a ELD-M on an animal.
